4 of the best brekkie in bed recipes for Valentine’s Day
We’re big believers in breakfast, and nothing quite beats brekkie in bed. With Valentine’s Day falling midweek this year, you’ve got two power moves available:

Either one is going to score major brownie points with your partner in crime. We’ve pulled together some epic, simple recipes, that are sure-fire winners, all deliverable in under 40 minutes.
Soft-boiled eggs with pancetta avocado soldiers – BBC Good Food
Everybody’s old favourite, with a twist. Creamy avocado, crispy pancetta finished with an oozing soft boiled egg… BOOM! And the best bit, it only takes around 15 minutes to produce with 10 minutes of prep time and 5 for cooking. If you’ve stayed motivated after January and you’re still hitting the gym, you will be thrilled to hear that this recipe is less than 520 calories and high in protein.
1 tablespoon of vegetable oil
1 ripe avocado
100g smoked pancetta
Bring a large saucepan of salted water to the boil. Carefully drop the eggs into the water and boil for 5 mins for runny yolks.
Meanwhile, heat the oil in a non-stick pan and wrap each avocado slice in pancetta. Fry for 2-3 mins over a high heat until cooked and crisp.
Serve the eggs in egg cups with the pancetta avocado soldiers on the side for dipping.
Parma Ham, Gruyère and Poached Egg Croissants – Food Network
Need we say anymore? This simplistic recipe is achievable for even the most novice of cooks, yet so delicious you wouldn’t know it. Poached eggs, that are quite literally bursting with flavour and elegant parma ham served in a crisp croissant – all complementing each other with face melting results. And yep, it takes less than 10 minutes. Serve with some good coffee and you’re onto a winner!
2 tsp wholegrain mustard
50g gruyère, sliced
4 slices Parma Ham
Preheat the oven to 200°C and warm the croissants for 5 minutes.
Split the croissants in half. Set the top halves aside and spread the bottom halves with a little wholegrain mustard and top with sliced gruyère – toast the cheese croissant halves until bubbling.
Meanwhile, poach the eggs in boiling water for 2-3 minutes. Drain on kitchen paper.
Top the cheese half with a poached egg and slices of Parma Ham then finish with the top croissant half.
French Toast With Streaky Bacon And Honey – Red Online
And here’s something for those of you with a sweet tooth! This is literally as good as it gets for a sweet breakfast – thick french toast and salty streaky bacon smothered in fragrant honey. Pile it high and pour that honey all over, for the ultimate Valentine’s day breaky in bed sugar rush.
50 ml milk
4 (or 8 for hungry guests) doorstep slices of white bread or brioche (one day old is preferable)
Beat the eggs and milk together with a pinch of salt and pour into a shallow dish large enough to take two slices of the bread snugly. Soak the bread two slices at a time in the mixture for at least 10 minutes, turning, so that it soaks up all the egg.
In a large saucepan, melt a generous knob of butter over a medium-high heat. When it is beginning to sizzle, add as many slices of the soaked bread to the pan as you can fit in one layer.
Fry on each side for two to three minutes, until golden, then transfer to a plate and eat immediately, sprinkled with cinnamon sugar or drizzled with runny honey or maple syrup. Excellent with streaky bacon cooked until crispy.
Easy and healthy Banana Oat pancakes – Simply-Delicious-Food
An old American staple that goes down terribly well with some maple. This incredible recipe can be cooked in under 20 minutes and will leave you both feeling super satisfied. Flourless and sugar-free, these pancakes pack a flavorful punch without the calories. Simply chuck the ingredients in a blender and the batter’s made! You could even do a romantic flip?
½ cup rolled oats
½ teaspoon baking powder
Pinch of salt
Maple syrup, to serve (optional)
Fresh fruit of your choice
In a blender, combine the peeled banana, eggs, oats, baking powder and salt.
Blend until the mixture is as smooth as you want it. Allow the batter to stand for 10-20 minutes until thickened slightly.
Heat a non-stick frying pan over a medium heat.
Fry spoonfuls of the batter until golden brown on both sides.
Serve with a drizzle of maple syrup and fresh fruit of your choice.
